48 Winter 2017 LOCALadk Magazine LOCALadk Both Jen and Jim operate their roasting productions in buildings that they have built to suit their needs, as well as New York State requirements. They are certified and inspect- ed regularly. Roasting coffee is a true labor of love and both were grinning and excited the whole time they were showing me the production process and talking about their roasting businesses. It would have been impossible to have written this stor y without sampling some of the different coffees Jen and Jim proudly roasted. We enlisted the help of several serious cof- fee drinkers, and they let us know what they thought. Topo: Honduras Manos de Mujer: " We all liked the mild taste and commented on how the beans are not bitter. We would definitely drink this coffee again. It reminds us of coffee we love from Guatemala." Topo: A beautiful tomorrow "This roast has a distinct, bold flavor without being too heavy. It carries an air y, floral aroma, is smooth to taste, with a touch of sweetness and citrus. Tastes great with goat milk!" Topo: Night Crawler "The aroma was powerful; I almost didn't want to brew it – but just smell the fresh grounds. It has a ver y strong, earthy smell, followed by a smooth and strong flavor. One of the best coffees I have ever had. " Upper Hudson Coffee: Roosevelt "This Costa Rican coffee has a rich flavor without the flo- ral finish of other beans. Drank it black due to its even body and finish. It became my favorite coffee, just after opening the bag." Upper Hudson Coffee: Dietter's Campfire Ditters Coffee- "The smoky undertones highlight this bold, full-bodied cof- fee. Easily a daily favorite (however prepared).
