Winter 2018 LOCALadk Magazine 35 LOCALadk Wilted Sesame Spinach 1 lb fresh spinach 2 Tbsp sesame oil 1 tsp sesame seeds In a pan heat sesame oil. Add spinach and saute 1 minute. Cover and turn heat off to wilt the spinach. Garnish with sesame seeds Other ingredients for layering Small Town Cultures Kim Chi— or other Kim Chi Mung Bean Sprouts or Pea shoots Fried Egg 1 egg per person you are ser ving 1 tsp oil for each egg Small fr ying pan This step should be done at the ver y end after you have assembled all of your Bibimbap bowl. Heat pan with oil on medium high heat. Add an egg gently so as not to break yolk. Cook for 2 minutes till white is firm, flip, and turn off heat. Let sit for a couple of minutes for a firm yolk or take off immediately for a runny yolk Assembling In a small cast iron pan or stone bowl, over low heat, put sesame oil to coat the bottom. Add rice mounded up in middle. Keeping each dish separate dress the rice with carrots, zuchinni, mushrooms, beef, etc. around the edges to create a moun- tain effect. Cover for 3 minutes. Take pan off of heat and top with fried egg. Ser ve with Gochujang sauce. When you eat Bibimbap mix all the ingredients together and enjoy! Sauteed Mushrooms (shitakes if you have) 1 lb mushrooms—thinly sliced 2 Tbsp sesame oil 2 Tbsp soy sauce In a saute pan heat up oil over medium-high heat. Saute mushrooms 5 minutes until completely brown. Add in soy sauce and cook 2 minutes more until soy sauce gets ab- sorbed. Sweet and Salty Beef or Seitan 1 lb thinly sliced beef (substitute seitan for vegetarian op- tion) ¼ cup cornstarch ½ cup vegetable oil to pan fr y— grape seed, canola, or co- conut ¼ cup sesame oil ¼ cup maple syrup ¼ cup soy sauce Mix sesame oil, maple syrup and soy sauce together—set aside Toss beef with corn starch. Heat oil in pan. Add beef in small batches and pan fr y by letting brown on one side and then the other until cooked through. Transfer to a bowl and add some of the sauce while the beef is hot. Pan fr y the rest of the beef add sauce to coat after each batch.
