Spring 2019 LOCALadk Magazine 31 LOCALadk Super Smoothie 1 cup Turmeric Sunrise Kombucha from Aqua Vitea 1 organic apple — chopped with core removed 1 leaf kale —stem removed ¼ bunch parsley—stems and leaves 1 small piece fresh ginger, peeled ¼ avocado or 1 Tbsp unrefined coconut oil 1 Tbsp fresh bee pollen *as long as you have no bee or honey allergies Blend all ingredients in a high-speed blender until smooth. Drink immediately. Some Benefits: Kombucha contains B vitamins necessar y for cellular metabolism, and probiotics and enzymes that promote digestive wellness. Organic Apples contain pectin, which helps re move toxins from the body, and quercetin, which benefits the immune system. Kale is rich in calcium and magnesium to calm the ner vous system and help maintain healthy bones and tissues. Parsley is high in calcium and rich in chlorophyll. Ginger is anti-inflammator y and helps alleviate nausea. Avocado is a good source of protein and healthy fats needed for energy production. Coconut Oil contains lauric acid, which creates an inhospitable environment for cancer cells. The fats in coconut oil promote the burning of belly fat and are a great source of energy. Carrot Ginger Miso Soup 5 heaping cups carrots—roughly chopped 1 medium onion—roughly chopped 4 garlic cloves— chopped 64 oz vegetable or bone broth 3 Tbsp fresh ginger—peeled and chopped 1 Tbsp extra virgin olive oil 2 Tbsp miso paste 1 Tbsp cumin powder 1 tsp turmeric powder Pinch of cinnamon 3 Tbsp fresh lime juice 15 oz can coconut milk ½ tsp Celtic salt ¼ tsp freshly ground black pepper to taste ¼ bunch fresh parsley leaves— chopped In a large pot simmer broth, carrots, onions, garlic, ginger, and salt and pepper until carrots are soft—about 20 minutes. Turn heat off. Add EVOO, spices, miso, and lime juice —mix well. Using an immersion blender or regular blender, puree ingredients until smooth. If using a blender, return soup to pot and turn burner on low. Add coconut milk and stir until thoroughly dispersed. Add more salt and pepper if necessar y. Garnish with chopped fresh parsley. Some Benefits: This soup is easy to digest and increases circulation in the body. The vegetables are high in antioxidants and the bone broth is an excellent source of protein. Miso protects healthy cells from radiation damage and certain types of cancer. Gin- ger will help curb nausea and coconut milk provides healthy fats.
