As a daily customer who misses the sincere hospitality of Or- igin, I can attest to the effectiveness of this approach. Like ever y other restaurant operator, Jecinda is unsure of how she, Josh, and her terrific staff will adjust, but she knows that they will adapt to the new normal. "This is an industr y full of people that can recalibrate and keep moving. We [customers and restaurateurs] need that feeling of walking into a local bar and having a beer waiting for you before you hang up your jacket." The same is true for that special hello, smile, and sought-after menu item that pulls guests into an Adirondack neighborhood restaurant from Lake George to Old Forge. Jecinda, whose background in restaurants, familiarity with business operations, energy-charged personality, and love of coffee and coffee people (she spent time in Costa Rica alongside those coffee people) has positioned herself as an essential part of the Adirondack food community. She ends our conversation with a hopeful projection. "As people re- turn to work and travel, restaurants will be crucial to help them feel like they are regaining something resembling their normal routine." She is well aware that the primar y attrac- tion to the Adirondacks is nature and our pristine environ- ment that is so special, but hopes that Origin and those in the restaurant business throughout the Park, can play a role in making people want to stay or return. Adirondack Hospitality will prevail as the world gradually adapts to a new normal and business as usual is not quite as usual as it was just a short time ago. One thing is for sure: great food and welcoming ser vice will always be the hall- marks of excellence that define restaurants in the 6-mil- lion-acre Adirondack Park. Some things will change, but that sincere attitude will remain a priority. Dozens of oth- er restaurants, café's, bars, breweries, deli operations, and coffee shops in the Park are busy preparing for their return to business and the opportunity to greet Adirondack friends and guests once again.
