It's a space any bistro owner in France would eye jealously, large enough to accommodate a baby grand piano alongside a bar well stocked with French wines and aperitifs. While a jazz pianist takes to the keys ever y Tuesday and on the first Friday of ever y month, Bastille Day brings a larger ensemble. Last year six members of Crackin' Foxy had diners up and dancing between courses to the sound of gyp- sy jazz and early 1930s swing. Anne also puts together a special menu for the occasion, featuring some of the LBC's signature dishes. The cheese plate includes what she considers to be the most authentical- ly French of local ingredients: the chevre (goat cheese) made at Asgaard Dair y in AuSable Forks and the artisan bread made by Yannig Tanguy at Crown Point Baker y. Appetizers include escargots with Pernod crème, made by LBC chef Tom Ruff, with its distinctive licorice flavor from the south of France. The main course offers a fish, chicken, meat, or vegetarian choice, including one of the LBC's best known dishes: pou- let basquaise —the first offering on the menu when the café opened, originally made by Noella Weissberg. Finally, what could be more appropriate for a Bastille Day dessert than the tarte au fruits bleu, blanc, et rouge, or the mousse au choc- olat à l'orange? With the LBC's Bastille Day festivities set to begin their second decade, Anne Sterling has become understandably nostalgic. Looking back, she takes pride in her association with the Weissberg family, sharing their investment in the LBC, in French culture, and in Saranac Lake —"the most won- derful place I've ever lived," says Anne. She is fond of quot- ing Christopher Weissberg: "I never thought that Bastille Day would mean so much to Americans, and I never thought this event would draw so many people to the café."
