Homemade Refried Beans 2 cups black beans or kidney beans— cooked or 1 can 3 cloves garlic—finely chopped ¼ cup oil ½ white onion—finely chopped (optional) ½ red pepper—finely chopped (optional) Pinch of cinnamon Pinch of chili powder Salt to taste In a large cast-iron fr y pan or non-stick fr y pan heat oil on medium high heat. Add the garlic. Saute 1 minute, then add onions and peppers with a pinch of salt to get the onions sweating. Stir continually for 5 minutes till onions and pep- pers are soft and slightly browned. Add the cinnamon and chili powder. Saute 1 minute. Turn heat to low and add the beans. Use a potato masher to mash the beans in the pan. This will give you a rustic bean mix. If looking for a puree, then run through a blender after. Heat till warm through- out. Taste for salt. Cabbage Slaw—simple topper to the beans 2 cups green cabbage —shredded 1 carrot—shredded ½ red onion—sliced thinly ¼ cup brown rice vinegar 1 Tbsp maple syrup ½ tsp salt Fresh lime juice —a squeeze Toss all ingredients together. Sauteed Tofu This can be added to breakfast or dinner tacos. Tofu can be tricky to get a great flavor. Here is a sure-proof recipe. The tofu we use is out of Ithaca, N.Y. and is quite firm! 1 lb firm tofu ¼ cup oil ½ tsp salt ½ tsp garlic powder Pinch of turmeric 1 Tbsp nutritional yeast Heat oil in a large pan on medium high heat. Crumble tofu into the pan. Add salt, garlic powder, and turmeric. Saute 5 minutes until the water from the tofu evaporates. If you can get a little browning on the tofu then it's perfect. Turn heat off. Add nutritional yeast. Done! Chunky Avocado Salsa I am a fan of guacamole, but I prefer chunks of avocado with my fresh salsa. We partake of this avo-salsa at least two times a week, and often ser ve it on top of local greens for a starter. Here it tops off our corn tortillas. 1 ripe avocado — cut into chunks 1 tomato — chopped medium ½ yellow onion— chopped small ¼ bunch cilantro — chopped fine Fresh lime juice —⅓ of lime Salt—to taste ¼ tsp garlic powder Hot sauce to taste Mix all the ingredients in a bowl and ser ve immediately. Usually there is nothing left of this, but if there is, note that avocado will turn brown after refrigerating. Dessert You must not forget slices of fresh local melon. Squeeze fresh lime juice on them and then either salt or sugar. You are a food lover! Enjoy.
