A windy day at the mountain. A rainy, cold walk with the dogs. Ice-skating on a frozen lake. A backcountr y romp. What do
all of these activities have in common? They are best topped off with a filling bowl of soup and fresh locally made bread. The
first spoonful will warm up your taste buds and satiate your nutritional needs. Umami for the winter soul!
Minestrone

Minestrone came to life in Italy. It is a flexible soup of the people, its flavors a happy marriage of season and region. Min-
estrone's name reflects its filling nature: "big soup." Onions, celer y, carrots, tomatoes and pasta are the hallmarks of the
soup, but the other ingredients are up to the chef and focus on what's in season or what needs to get used up. Here is my
version including sun-dried tomatoes, chickpeas and orzo. I am usually inspired to create this soup when we have leftover
orzo or tomato sauce. Make a huge batch and save for the next day (it will taste even better). Leftovers can be frozen or
given to deser ving friends.
