Filling
• 6 local organic apples, peeled and cored and thinly sliced
• 2 Tbsp. maple sugar or coconut palm sugar
• 1 Tbsp. freshly grated ginger
• Zest of one lemon
Topping
• ½ cup rolled oats
• ½ cup all-purpose or gluten-free flour
• 1/4 cup maple or coconut palm sugar
• ¾ cup butter from grass-fed cows, or coconut oil
• 1 tsp. cinnamon
• 1 tsp. vanilla extract
Directions
Preheat oven to 350 degrees. In a medium mixing bowl,
combine all topping ingredients. Combine butter with dry
ingredients using your hands until pea-sizedballs are formed.
Set aside in the fridge while you slice the apples. inly slice
apples and spread evenly on an 11" x 7" bakingpan. Sprinkle
sugar and freshly grated ginger over apples. Grate lemon peel
(zest) over apples. (Grate only the yellow peel, notthe white
part.) Grate fresh ginger over apples. Spread topping evenly
over apples. Bake for 35 minutes or until the topping is golden
brown and thejuices from the apples are bubbling. Remove
from the oven and let cool for at least 15 minutes. Serve with
a scoop of local sheep milk yogurt, fresh whipped cream, or
vanilla ice cream. Serves 6-8 people
