Blue halos and white-edged fins — ranking right up alongside loons, vintage snowshoes, and fall foliage — Salvelinus fontinalis, the brook trout, is a classic icon of the Adirondacks. But 'Ole Square Tail' isn't just a symbol of the Adirondacks, it is also the state fish of New York and the only trout that is truly native there.
