OK! Now that you have gone through
the trouble of catching a few brookies
for the table, what's next? I am a huge
proponent for catch-and-release; almost
all trout go back in the water to swim
another day, especially trophy-caliber
fish. However, I find absolutely nothing
wrong with a few pan-sized brook trout
for the table every now and again.
is will be a rather simple dish. It
brings together locally foraged wild
ingredients that seem to fit the overall
bill very well.
