regular and just passing through. "I love when people
come in here and ask about our story," explains Nick.
"This is our dream job."
This is no small claim coming from a guy whose fore-
arm tattoo reads "Fat Equals Flavor," over an image of
a cheese trier, a tool cheesemakers use to test cheese
for the perfect flavor and texture. Nick is a humble
guy, but one can eventually drag it out of him that he
is, in fact, an award-winning cheesemaker. For three
years, Nick was immersed — not literally — in creamy
goodness at Jasper Hill Farm, an acclaimed farm in
Vermont's Northeast Kingdom, while Gemma was
honing her skills with pastry at the Topnotch Resort
in Stowe. Jobs for both at the exclusive Upper Sara-
nac Lake resort The Point brought the couple to the
Adirondacks. The rest is delicious history.
Wednesday through Saturday, Jamdots Baking Co.
bustles with activity and intoxicating aromas. Sunshine
pours in the flower-painted windows, and something
amazing is always going on in the kitchen.
As the bakery grows and evolves, and Nick and Gem-
ma continue to make their culinary mark in Saranac
Lake, there will always be something tasty and excit-
ing to indulge in.
