" " Après LOCALLY DELICIOUS ► How Sweet it is! by Chef Dave Hunt G enerations was very excited to enter this year's Wing Wars competition in Lake Placid. It is a fun event where everyone gets together to taste some delicious chicken wing creations and a winner is chosen for having the tastiest wings. It also benefits a great cause, North Country Life Flight. We started very early Sunday morning blanching and frying our wings, making them extra crispy for the short trip over to Wise Guys, a local pub where the event was being hosted. I decided to make a hot n' smoky maple chipotle flavored sauce because real New York maple syrup is my favorite ingredient to work with. With wings and sauce in hand, we were ready to begin handing out our delicious wings. After taking only a few steps out of our front door, on the way to Wise Guys, I tripped, dropping all of our famous sauce and covering Main Street Lake Placid in spicy goodness. Not missing a beat, my team and I returned to the kitchen, and quickly prepared another batch. Hastily, we managed to make it to the event on time. I served all of the wings we brought and had to return to the restaurant to get more. After all was said and done, and the last wing consumed, our wings won the competition! You can get the award winning chicken wings at Generations any day of the week, but as a special on Wednesdays, they come with a draft beer for only $10., Hot n' Smoky Maple Chipotle Chicken Wings • Chicken Wings – Raw • Seasoning – Kosher Salt and Victoria's Smokey Chipotle Seasoning • Blanch seasoned wings in oven, approximately 20 minutes at 350 degrees • Finish in fryer until crisp 5-8 minutes(crispy wings are essential) • Wing Sauce – Hot n' Smokey Maple Chipotle • 6 oz. good BBQ Sauce • ½ can Adobe Chipotle Peppers (adjust to your heat preference) • 6 oz. Low Sodium Soy Sauce • 6 oz. Pure N.Y. Maple Syrup • 4 oz. Mirin (Seasoned Rice Wine) • 1 tbsp. Victoria's Smokey Chipotle • 1 tbsp. Ground Ginger • 1 tsp.
