sit half an hour hour. (Start here if soaking overnight) Drain, put beans back in pot, cover with more water, and then bring to a boil and let simmer until tender. Drain the beans. Place millet in a medium sauce pan. On medium high heat toast the millet by stirring it constantly - after two minutes, add the cumin and mustard seeds and continue to stir for two more minutes. Add the turmeric, vegetable bouillon, salt, and three cups water. Cover the saucepan and let water come to a boil. Turn down heat to low and let simmer until all liquid is absorbed-ten minutes. Turn off heat and let millet sit for five minutes. Turn oven on to 350 degrees. Cut the delicata squash in half length- wise and take out the seeds. On a baking sheet put squash face down. Pour water onto baking sheet to cover the bottom. Bake for 20 min- utes or until flesh is soft. Set aside to cool. When cool to touch, peel skin off and cut into chunks. In a saute pan heat up canola oil. Add onions and shallots and sauté for four minutes, add a pinch of salt, peppers, and garlic. Saute until everything in soft - five minutes In a large bowl combine, beans, millet, sauteed vegetables, squash, maple syrup and chopped cilantro. Taste and add salt and pepper as desired. Add the egg and stir. Grease a sheet pan. Form mixture into small balls - dust with corn- meal and place on sheet pan. Press down the balls to form sliders. Spread a little more oil on top of the bite.
