Hughes is instituting a training program developed by leaders in the cof- fee industry to ensure consistency and great custom- er service. Origin Coffee Company will be open 7 days per week from 6:30am to 4pm, serving single-origin pour over coffees, espresso drinks, and an "on tap," freshly brewed coffee for those looking for a quick grab- and-go pick-me-up. Hughes will also offer breakfast and lunch sandwiches, soups, salads, and a revolving offering of baked goods -- all crafted in-house. Enter Jecinda Hughes: Saranac Lake local, coffee en- thusiast, and sole proprietor of the newly opened Origin Coffee Co. The idea of Origin Coffee took root nearly 10 years ago when Hughes stayed on a sustainable develop- ment coffee co-op in Costa Rica. At the time, she was studying ecotourism at Paul Smiths College, and was inspired not only by the coffees she experienced, but the unique culinary and cultural opportunities en- abled by sustainably grown coffee. Hughes is also no stranger to creative food and drink. For years she has held various positions in the Adiron- dack hospitality industry, dedicating her profession- al efforts and interests to specialty food, drink, and baked goods. During that time, Hughes has steeped herself in the world of coffee; attending multiple conferences throughout the country and training with the Barista Guild of America to hone the skills necessary to craft a perfect cup of coffee. Fortunately for the North Country, she has created a place right in Saranac Lake. When deciding to open her business, she knew she wanted to be downtown, ideally in a location central to the community. Hav- ing the exposure and being easily accessible was a priority but the ultimate goal was playing a part in rebuilding the vibrancy of the unique and historic downtown community. Equally as unique and well chosen is her roaster and supplier -- Coava Coffee Roasters of Portland, Ore- gon. As Hughes explains, they mirror her values and commitment to sustainable agriculture practices; producing complex, balanced, high quality coffees that are harvested and purchased directly from farm- ers who work, often exclusively, with Coava.
