38 Fall 2015 LOCALadk Magazine LOCALadk A Recipe Worth Each Step: Thai Peanut Noodles By Wendy Kate Reese When tourists head home and the kids are back in school, locals get to, once again, play in the woods we vacated back in June. Those of us who live here year-round have many strategies for sharing our park with visitors. For some, it means taking weekdays off rather than weekends. For others, it means engag- ing in activities like backcountry skiing, where we hit the same hiking trails that get flooded by the thousands in summer by strapping on skis and breaking trail through feet of snow in the depths of winter. In addition, most of us take full advantage of our favorite season, Autumn. This year, my goal is to hike the Northville-Placid trail- all 134 miles of it, bare- foot! After completing the 46 High Peaks barefoot a couple years ago, I set my sights on another goal. The Northville-Placid trail ends a quarter mile from my home, and I trail run the last few miles of it daily. But other than getting my dog out for some exercise, I haven't ventured much down this extended footpath through some of the most remote parts of the Adirondack Park. September will lend me this opportunity. I asked Tammy to help with meal ideas for my trip. Since I've never done an extended through-hike, this type of outdoor experience is new for me. Luckily, Tammy has been backcountry camping for a long time, and was enthusiastically up for the task. Here is a recipe she enjoys when in the woods. The ingredients are light to carry yet filling to eat. The flavors are delicious and warming, and the preparation is easy and efficient. I'm sure after a long day trekking through forests and along rivers, I'll be ready to chow down on this hearty camping meal.
