No one likes a quiz.
But at the KANU Lounge at the Whiteface Lodge, not only do
people seem to enjoy them, they're actually asking for them by
name: "Anyone want to play The Game?"
On a recent September night, a group of well dressed women,
early thirties, crowd one corner of the heavy wooden bar. They
can't stop smiling, and staring, at Kanu's Lead Mixologist Zach
Blair. They hang onto his every word.
"Do you want the beach, up in the mountains, out in LA or sipping
in Tokyo?"
A palpable, excited thrum emanates from the group. The woman
in front, the one this question is meant for, doesn't waver.
"Tokyo," she smiles. Her friends buzz with approval.
"Herbs okay? Bitters? Egg whites?"
Each of Zach's questions is met with an affirmative, until final-
ly he hoists a copper shaker up over his shoulder and begins a
