vicious shaking. The noise is alarming, uniquely at home behind
a bar. He strains the concoction into a chilled coupe - think Mad
Men 60s style Champagne glass - adds a garnish or two, and
slides the beverage across the bar.
You see, Zach isn't using a staid cocktail list, where all the frumpy
classics line up in orderly fashion, hoping for a quick demise. No.
He asks you a run of several questions, quizzes you, in a manner
called "Bespoke" style, and crafts a singular cocktail for you and
your tastes alone.
"Here you go: Hibiki Japanese whiskey, lychee, muddled ginger,
lime juice, simple syrup, a little pomegranate juice, egg white
floater and topped with sake."
"Thank you, Zach," the woman says before whisking her drink
away.
"You're welcome," he says, almost shyly. "Okay, who would like
to go next?"
